1 lb. carrots
½ c. white sugar
3 eggs
1 stick butter, melted
3 T. flour
1 tsp. vanilla
powdered sugar for dusting

Directions:
Directions:
Peel and cook carrots until tender enough to mash in small amount of water. Drain and reserve liquid. Mash carrots, adding reserved water until smooth. (I use mixer.) Add remaining ingredients and mix well. Bake 350º for about 1 hour or until set and slightly brown. Sprinkle with powdered sugar.

This is the same recipe used at Piccadilly Cafeteria. Tastes a lot like sweet potatoes. Very easy and very tasty. Can also add cinnamon and pecans, if desired.
