1 c shortening
2 eggs
1 tsp baking soda
1/2 tsp salt
1 c sugar
1 c persimmon pulp
1 3/4 c flour
1 tsp cinnamon
1/4 tsp nutmeg
1 c raisins, chopped
1 c flaked coconut
1 c walnuts

Directions:
Directions:
Cream sugars and shortening until fluffy. Add eggs, one at a time. Add dry ingredients, then persimmon pulp. Fold in raisins and coconut. Bake at 350 13-15 minutes until lightly brown.
