Gram's Stuffed Peppers Recipe

Ingredients: 6 or 7 fresh, long Italian green sweet peppers 3 or 4 cups coarse Italian bread crumbs 1 clove of garlic, finely chopped 8 to 10 tbsp. of olive oil, more if needed 1 1/2 tsp. oregano 1/2 tsp. basil 1/4 tsp. parsley 1/2 cup Italian grated cheese salt, to taste water, to moisten

Directions:Wash peppers. Remove top of each pepper (with stem) and reserve. Remove seeds and cut out with a sharp knife. Lightly salt the insides of each pepper. Mix all ingredients in a large bowl. Add oil on top, a little water and toss well. Making sure that the filling is nice and moist, fill each pepper to the top LOOSELY and evenly. Replace tops of peppers with toothpicks to hold in place. Rub outside of each pepper with oil. Place each pepper in baking dish. Add 1 1/2 cups of water to dish. Bake at 325º for 45-50 minutes. |
