1 c boiling water
1 1/2 c soft bread crumbs
1 c sugar
2 eggs, beaten
juice of 1 large lemon
1 tbsp butter, melted
1 tsp grated lemon ring or 1 tsp lemon extract
pastry for 2 crust pie

Directions:
Directions:
Pour boiling water over bread crumbs. Add sugar, eggs, lemon juice, butter and lemon rind. Put pie crust on 9' pie plate; pour in filling and top with second crust. Bake at 450 for 15 minutes; reduce to 350 and bake 30 minutes more.
