2 pkg quick-rise yeast
1 c. warm water (105º)
5½ c. all-purpose flour
1 stick unsalted butter, softened
¼ c. sugar; 1½ tsp. salt; 3 large eggs
1½ c. milk, scalded

Directions:
Directions:
Dissolve the yeast in water in mixer bowl with dough hook (or food processor). Add milk, sugar, eggs, butter and 2 ½ cups flour. Mix for 1 minute, scraping sides of the bowl. Add remaining flour and mix until smooth. Cover bowl and let rise in a warm place until doubled. (If made in food processor, put batter into a greased bowl or zip-top plastic bag. Allow to double in size.) Spoon (with wooden spoon) into well greased muffin tins; let rise until doubled. Bake in a preheated 350º oven for 25 – 30 min. Cool for 5 min before removing from the tins; serve warm. Makes 18 large rolls.
