4 medium zucchini, grated
¾ cup chopped parsley
1 medium onion, chopped
1 clove garlic, chopped
¾ cup cheddar cheese, grated
1 tsp. each of Italian seasoning, basil, oregano and pepper
¾ cup vegetable oil
5 eggs, beaten
2 cups Bisquick® (or 2 cups flour and 4 tsp. baking powder)
1 cup Parmesan cheese, grated, for topping

Directions:
Directions:
Combine all ingredients except Parmesan in large bowl. Pour into ungreased 9 x 13 inch Pyrex baking dish. Sprinkle Parmesan cheese on top. Bake at 350⁰ for 45 minutes or until brown on top.
