12 carrots
2 T. olive oil
1¼ tsp. kosher salt (or regular salt)
½ tsp. ground black pepper
1 T. minced fresh dill or parsley

Directions:
Preheat oven to 400⁰. Cut carrots diagonally into 1-2 inch thick slices. The carrots shrink a bit while cooking, so make big slices. Toss in bowl with olive oil, salt and pepper. Place on baking sheet in one layer and roast for 20 minutes. Garnish with dill or parsley. Serves 6.

Personal Notes:
I skip the bowl and season the vegetables directly on the baking sheet!! The key to this recipe is a very high oven!!
