Ingredients: CRUST: 1 1/4 cups crushed graham crackers 1/2 tsp cinnamon 2 tbsp butter
FILLING: 3- 8 oz pkgs of cream cheese 1/2 pkg 3 oz. cream cheese 2 pints of sour cream 2 tsp vanilla 6 eggs 1 3/4 cups sugar
TOPPING: anything of your choice...strawberries, blueberries, etc...fresh or canned

Directions:Preheat oven to 350 degrees CRUST: mix together and press into spring pan (soften or melt butter)
FILLING: Let cream cheese soften about 1/2 hour. Mix cream cheese with sugar Add vanilla and the eggs one at a time Fold in sour cream Pour into spring pan with graham cracker crust Bake 1 hour at 350º DO NOT OPEN DOOR-turn off heat and leave in oven 2 more hours DO NOT PEEK Cool and refrigerate for at least 3 hours Add your own topping if you choose |

Notes: This is my Grandma Russell's recipe. It comes with strict orders not to peek or you'll get a crack in the cheesecake. She suggests using a larger than 8 1/2 inch spring pan. I suggest having a large mixing bowl. This is one of the first things I learned to make on my own. Enjoy!
