2 eggs
1 cup sugar
½ cup vegetable oil (or applesauce for lower fat option)
2 tsp. vanilla extract
1 cup flour
1 tsp. baking powder
pinch salt
4 small apples, peeled and cut in pieces
3 T. brown sugar
1 tsp. cinnamon

Directions:
Directions:
Beat eggs and sugar. Add oil and vanilla; beat well. Add dry ingredients ¼ cup at a time. Combine apples, brown sugar and cinnamon. If the mixture seems very wet, add 1 tablespoon flour at a time until wetness disappears. Grease and flour 9 x 9 inch pan. Drizzle ½ of the dough back and forth across pan until covered. Add all of the apple mixture. Drizzle remaining dough to cover apple mixture. Bake at 325º for 45 - 60 minutes. Recipe can be doubled or tripled easily.
