6 T. margarine, very soft, almost melted
cup sugar
2 eggs, beaten
tsp. vanilla extract
1 cup sweet rice flour
1 tsp. baking powder
tsp. baking soda
1 tsp. xanthan gum
food coloring, optional

Directions:
Directions:
Preheat oven to 350⁰. Cream margarine and sugar together. Add well-beaten eggs. Add vanilla. Sift and add dry ingredients; mix well. If desired, add food coloring. Drop onto greased or parchment-lined cookie sheet. Bake for 10 minutes.
