6 eggs, separated
7 oz. semisweet chocolate (45 - 50% cocoa)
1 cup (2 sticks) butter or margarine
¾ cup sugar
1 ¼ cup almond meal
Confectioners’ sugar

Directions:
Directions:
Preheat oven to 350⁰. Beat egg whites until frothy by using an electric mixer, then set the egg whites aside. Break the chocolate into small pieces and melt it with butter in a double boiler or in a bowl set in hot water. Beat the egg yolks with the sugar. Fold in the melted butter and chocolate mixture. Add almond meal to the chocolate and egg yolk mixture and mix well. Delicately, fold in the beaten egg whites. Bake at 350⁰ until a wooden pick inserted in center comes out clean, approximately 35 to 40 minutes. Once the cake is cooled, sprinkle with confectioners’ sugar.
