1 cup butter or margarine, softened (or substitute applesauce to make lower fat recipe . . . this really works!)
2 cups sugar
2 cups mashed very ripe bananas
4 eggs, well beaten
2 tsp. baking soda
2 ¼ cups flour
cinnamon sugar to coat pans

Directions:
Directions:
Cream together the butter and sugar. Add bananas and eggs. Combine baking soda and flour and add to the banana mixture, stirring just enough to moisten the flour. Grease two 9 x 5 x 3 inch loaf pans (or muffin pans) and coat with cinnamon sugar. Pour batter into prepared pans. Bake at 350⁰ for 50-55 minutes or until bread tests done. Run knife around edge and turn out immediately. Cool on wire rack. Enjoy!
