Chicken - boneless breasts, cut into small serving pieces
Adobo spice (Goya product)
2 large onions
4 cloves minced garlic
pimientos
1 tsp oregano
1 -2 Tbsp olive oil
Yellow Rice

Directions:
Directions:
Season chicken with Adobo. Saute in olive oil. Add sliced onions, garlic, oregano, and more Adobo if desired. Add a little water if you need to. Simmer til chicken is done. Add pimientos. Serve over yellow rice.

If you haven't tried Adobo spice, you'll find it's a good all-around seasoning. It comes with pepper or without. I like it with pepper.
