1 1/2 cups sugar (white and/or brown)
3/4 cup oil (can use 1/2 oil, 1/2 yogurt)
3 eggs (or egg substitute)
2 cups grated zucchini (I grate and freeze into 2 cup bags for use later)
2 tsp. vanilla
3 cups flour
3 tsp. cinnamon
1 tsp. salt
1tsp. baking soda
1 tsp. baking powder

Bake in 2 bread pans or muffin tins (greased)
350 degrees for 16 minutes (muffins) or 45-60 minutes (bread)
