1 3/4 c. flour
3/4 tsp baking soda
1/2 tsp salt
3/4 c sugar
1 1/4 tsp cream of tartar
2 eggs, beaten
1/2 c. vegetable oil
2 ripe bananas, mashed
walnuts, optional

Directions:
Directions:
Combine first 5 ingredients in a large bowl; make a well in the center of the mixture. Combine remaining ingredients; add to dry mixture, stirring until moistened. Fold in walnuts if desired.
Pour batter into a greased 9x5x3 inch loaf pan. Bake at 350º for 45 minutes or until a wooded pick inserted in the center comes out clean. Cool in pan 5-10 minutes; remove from pan and let cool on wire rack.
