4 c. flour
2 tsp. baking soda
2 tsp. salt
1 T. cinnamon

6 eggs
4 c. sugar
2 c. vegetable oil
2 c. packed grated carrot
1 large can crushed pineapple (drain well)
4 tsp. vanilla

Directions:
Directions:
Sift together first 4 dry ingredients and set aside.
Beat eggs, sugar and oil together. Stir in carrots, pineapple and vanilla. Add dry ingredients and mix until well blended. Don't over mix.
Turn batter into 3 medium greased and floured loaf pans. Bake at 350 for 1 hour and 10 minutes.
