1 C corn meal
1 1/2 t salt
5 1/2 c boiling water

Directions:
Directions:
Bring water to rapid boil in top of double boiler over direct heat. Sprinkle in corn meal stirring constantly. Add salt and continue cooking and stirring over direct heat for 5 minutes. Place over hot water, cover and cook for 50-60 minutes longer stirring occasionally.
Pour while hot into a small loaf pan which has been rinsed out with cold water. Smooth over the top. When cool place in refrigerator over night or until cold and firm.
Turn out and cut in slices, dip lightly into salted flour or slightly beaten egg and brown in hot fat.
Serve with butter and maple syrup or honey.
