Ingredients: With a bowl of pasta, or brown rice, and some veges I can create:
American: Add a variety of grated cheeses, some sauteed green onions and garlic, and toss in some leafs of spinach just before serving.
Italian: Grated Roma and Parmesan cheeses, sauteed garlic, sweet or white onions, green or red bell peppers, mushrooms, zucchini, and Italian seasoning - basil, oregano, etc. Can add fresh tomatoes and pine nuts at the very last.
Mexican: Grated Fresca or sharp cheese, sauteed garlic, onions, peppers, and some Taco or Fajita seasoning. Can add fresh tomatoes.
Oriental: Saute veges in olive oil and a little sesame oil, add some garlic, saute green onions, peppers, some diced carrots, snap peas, and can add bean sprouts and water chestnuts at the very last. Also toss in a couple of handfuls of peanuts (raw or roasted, without skins).
With a bowl of lettuce (leaf, spinach, purple onion, cabbage): Italian: Olives, green peppers, croutons, pepperoni, salami, mozzarella cheese, Italian dressing. Serve with Bread Sticks.
Mexican: Olives, green peppers, black beans, corn, avocado, tomato, grated cheese, Southwestern dressing. Serve with cheese quesadillas.
Oriental: Sprouts, water chestnuts, celery, mandarin oranges, cashew or peanuts, Asian dressing. Serve with a sliced chicken breast - breaded or plain, and an egg roll.
I keep the following items in my fridge all the time: Mushrooms, Bell Peppers, Zucchini or Yellow Squash, Sweet or White Onions, Celery, Baby Carrots, Snap Peas, Roma Tomatoes, Potatoes - red or Russet, Spinach, Lettuce mix.
With these ingredients I can make any combination of the above, plus plenty more: Vege pizza Fajitas Quesadillas with veges Bajio-style burritos Saute mushrooms, peppers, zucchini, and onions along with chicken, or sausage and put into a pita, sprinkle Mozarella cheese on top. Slice into large pieces, sprinkle with any type of seasoning salt and bake, covered, for a few minutes, and then sprinkle with Parmesan cheese and broil for a second. I can do this in my oven or outside on the grill.
