One large cucumber -- preferably an English one
1/4 - 1/2 cup Mirin (Sweet Cooking Seasoning)
1/4 cup brown sugar
T grated fresh giner
1/2 red onion sliced
Directions:
Directions:
Peel cucumber, if desired, and slice. Place sliced cucumber and onion in a bowl. Mix the remaining ingredients and pour over the cucumber and onion. Let stand 2-3 hours, stirring occasionally.
