4 eggs
2 cups cooked pumpkin (16 oz. can)
1 cup oil (I use ½ cup oil and ½ cup plain or vanilla yogurt)
1 ½ cups brown sugar
1 ½ cups white sugar
2 tsp soda
½ tsp b powder
1 ½ tsp salt
3 tsp pumpkin pie spice (or 1 tsp cloves, 1 tsp nutmeg, 1 tsp cinnamon)
3 ½ cups flour (1 cup whole wheat)
1 bag chocolate chips
Can add: raisins, nuts
Combine eggs, pumpkin, oil, sugar and stir. Add remaining ingredients.
Bake in 2 large or 4 small bread pans or muffin tins.
325 degrees for 40 minutes (check with a toothpick and see if you need to cook longer. With muffins, you can shorten the time to about 25 minutes.)
