1 1/2 cups flour
1 cup sugar
3/4 tsp. salt
1/2 tsp. baking soda
2 eggs or egg substitute
1/2 cup oil (I use 1/4 cup oil, 1/4 cup yogurt)
1/2 tsp. vanilla extract
1/8 tsp. almond extract
1 1/4 cup peeled, chopped, fresh peaches (you can substitute with canned)
1/2 cup chopped almonds

Mix together dry ingredients
Add liquid
Lightly stir in peaches and almonds
Put into greased muffin tins
Bake at 375 degrees for 20-25 minutes

I chop fresh peaches, put into 2 1/2 cup plastic bags and freeze. Then I can have these muffins year round. I have also used nectarines - don't have to peel them.
