1/2 cup butter or 1/4 c butter and 1/4 c yogurt
1 cup sugar, brown or white
2 eggs or egg substitute
1 cup bananas (about 3)
3 Tbsp. milk
1 tsp. baking soda
2 cups flour (white, wheat, sometimes I add oats)
1/2 tsp. salt
1 tsp. vanilla

Mix together, pour into greased bread pans or muffin tins
Bake at 350 degrees for 30-45 minutes

OK - this is a recipe that's fun to mess with. I've doubled the recipe and used 1 cup bananas and 1 cup crushed pineapple. I've added orange juice rather than milk and some grated orange peel, then put an orange glaze on the muffins. I've added coconut and nuts as well.

Secret - too ripe bananas? Pop in the freezer, unpeeled. Pull out of the freezer about 4 hours before using, then dump into the bowl to mix up. Don't need to mash, and the brown color isn't a problem.
