2-3 large Vidalia onions
3 T. extra-virgin olive oil
2 T. garlic, chopped
1 tsp. salt, or to taste
1/2 tsp. freshly ground black pepper, or to taste
1/2 c. fresh mint
1/4 c. balsamic vinegar

Directions:
Directions:
Remove onion skins and trim ends; cut onions in half from stem to root end. In a medium-sized bowl, stir together olive oil, garlic, salt, pepper and mint. With your hands, coat onions with the mixture and place them in onion roaster. Bake in preheated 350 degree oven for 30 minutes. Baste with the dish juices and continue roasting for another 15 minutes or until the onions are soft when pierced with a knife. Remove from oven, drizzle generously with balsamic vinegar, and arrange on platter. Serve 4.
