Ingredients:  
1 bunch (about six cups) roughly chopped spinach
1/3 cup dried sour cherries (or cranberries or apricots)
3 green onions, thinly sliced
1 granny smith apple, sliced and chopped
1/2 cup seedless red grapes, cut in half
1/4 cup walnuts (or other nuts), coarsely chopped
2 tsp. apple cider vinegar
2 T. olive oil
salt and pepper
1/3 cup crumbled goat or feta cheese

Directions:
Directions:
Combine spinach, dried fruit, scallions, apple slices, grapes and nuts in a large bowl. Whisk together vinegar and olive oil. Season with salt and pepper. Pour over salad. Toss in cheese. Serve.
