1 cup quinoa, rinsed
1 ½ cups broth or water
1 large bunch fresh parsley (about 4 oz.), finely chopped
1 bunch fresh chives (about ¼ oz), chopped
1 T. olive oil
salt and pepper to taste

Directions:
Directions:
Bring broth or water to a boil. Add quinoa and reduce heat. Cook quinoa in broth or water until liquid is absorbed, about 15 minutes. Let cool. Add chopped parsley, chives, olive oil, salt and pepper to quinoa. Serve cold as a salad or side dish.

Quinoa, pronounced KEEN–WAH, means “Mother Grain” in the Inca language. It's high in protein and a complex carbohydrate.
