1 English cucumber, cut into bite-sized pieces, seeds removed
6 Roma tomatoes, cut into bite-sized pieces, seeds removed
4 green onions, sliced
fresh dill, to taste
fresh lemon juice from 1 to 2 lemons, to taste
1 to 3 T. olive oil, to taste
salt and pepper, to taste

Toss vegetables and dill together in a large salad bowl. Add lemon juice, olive oil, salt and pepper. Serve cold.

My husband is Israeli and prefers this to a green salad. Variations include adding red onions, red or yellow peppers, Greek pitted olives, feta cheese and/or artichoke hearts.
