2 tsp. olive oil
1/4 cup chopped carrots
1/4 cup finely chopped celery
1/4 cup finely chopped onions
freshly ground black pepper
1 quart vegetable stock
1 1/3 cups dried split peas
salt to taste
dried basil to taste
dried dill weed to taste
garlic powder to taste

Heat the oil in a saucepan over low heat. Add the carrots, celery, onion and thyme, season lightly with pepper and cook for 10 minutes. Add the stock and split peas, and bring to a boil quickly over high heat. Lower the heat and simmer until the peas are tender, about 1 hour. Add salt, basil, dill and garlic powder during the last 5 minutes of cooking time. Puree two-thirds of the soup in a blender and stir it into the remaining one-third. If the soup is too thick, thin it by adding a little more stock. Add salt and additional pepper to taste. Yield: 4 servings (serving size: 1 cup)
NOTE: Do not add salt until the peas are fully cooked, because salt will prevent the peas from becoming tender.

The basic split-pea soup recipe… A wonderful fall or winter soup, and so good for you! I like to serve this soup with fresh cornbread.
