3 cups chicken broth
1 (15 oz.) can creamed corn
1 cup cooked chicken, diced
1 T. cornstarch
2 T. cold water
2 egg whites, beaten
2 T. parsley, finely minced

Directions:
Directions:
Combine broth, corn and chicken in a large saucepan. Bring to a boil over medium heat. Blend cornstarch with water and add to the soup. Cook uncovered for 3 more minutes until thickened. Add the beaten egg whites in a slow drizzle while stirring. Reduce heat and simmer 5 minutes. Serve garnished with minced parsley. Makes 4 servings.
