1 small can tomato sauce
2 cans water
3 to 4 small potatoes (large cubes)
drizzles of olive oil
1/2 tsp. salt
1/4 tsp.pepper
1/2 tsp. oregano
garlic clove, chopped
3 or 4 thick slices hard Italian bread, broken

Directions:
Directions:
Mix all ingredients, except for bread, in saucepan. Simmer, loosely covered, for about 45 minutes. Shut off heat, then add bread cubes and mix with potatoes until slightly smashed together. Cover and let sauce absorb bread, for 10 minutes or so. Mix again, and serve. Should be lumpy.

This was used for a main dish, often served with a salad, because it is filling and goes a long way. Works well, especially for large families when doubled, or tripled. Seasoning ingredients aren't exact, measure to your taste. My Mother never measured anything, but everything was always delicious! Her brothers especially loved this dish! Reminds them of their childhood when their Mother made it for them!
