2 qts. chicken broth
2 (15 oz.) cans black beans, drained
1 (12 oz.) bag frozen white petite corn
2 cloves garlic, minced
2 (14.5 oz.) cans diced tomatoes
1 roast chicken, meat removed from skin and bones and then cut in small chunks
1 bunch cilantro, chopped, reserving a few sprigs for garnish
2 T. ground cumin
salt and pepper to taste
Toppings: grated cheese, crushed tortilla chips, avocado, sour cream, chile peppers, hot sauce.

Directions:
Directions:
Heat broth, beans, corn, garlic and tomatoes and bring to a boil. Add chicken, cilantro, cumin, salt and pepper. Simmer ten minutes for flavors to blend. Serve garnished with cilantro sprigs and toppings of choice.
