3 T. unsalted butter
1 large onion, chopped
3 cloves garlic, minced
¼ cup fresh ginger, chopped
7 cups chicken or vegetable stock (gluten-free if desired)
1 cup dry white wine
1 ½ lb. carrots, peeled and cut into pieces
2 T. fresh lemon juice
pinch curry powder
salt and pepper to taste

Melt butter in large pot over medium heat. Add onion, garlic and ginger and cook for 15 – 20 minutes. Add wine, stock and carrots. Heat to boiling; reduce heat, uncover and simmer until carrots are tender, about 45 minutes. Puree soup in a blender or food processor or with immersion blender. Season with lemon juice, curry powder, salt and pepper to taste.

This soup is a favorite of my extended family. I make it for most fall get-togethers, although it is good year-round.
