1 package dry split peas
6-8 cups water
1 meaty ham bone or 2 smoked ham hocks or shanks
4 chicken bouillon cubes
2-3 cans (4oz) chopped green chilies
1 medium onion, chopped
2 medium carrots, sliced
2 celery ribs, sliced
1 clove garlic, minced
1-1/2 tea dried oregano
1/4 tea pepper
1/8 tea ground cumin

In a soup kettle, combine peas, water, ham bone and bouillon and bring to a boil. Reduce heat then cover and simmer for about 1-1/2 hours. Add the remaining ingredients and bring to a boil. Reduce heat then cover and simmer for about 1 hour longer. Remove the ham bone and cut meat from bone. Return it to the soup and heat through.
