7 pounds green tomatoes sliced 1/4 inch thick.
3 C dehydrated lime dissolved in 2 gallons of water
Soak tomatoes 24 hours in lime water stirring carefully. Drain and wash well in cold water then soak in cold water three hours. Drain being careful not to break as slices are very crisp.
Make syrup: 3 pints cider vinegar, 5 pounds sugar, 1 tsp whole cloves, 1 tsp ginger, 1 tsp celery seed, 1 tsp allspice. Make syrup in for it to be cold, then pour over tomatoes and let stand over-night. In the morning, bring to boil, reduce heat to low and simmer gently 1 1/2 hours.
