8 medium potatoes (3 lb)
2 tbsp. butter
1 cup sour cream
300 gm frozen spinach, chopped
2 green onions, chopped
1 egg, beaten
300 gm cooked squash
1 tbsp. ginger
1 cup grated cheddar cheese

Directions:
Directions:
Preheat oven to 350. Grease a 9x13 baking dish.

Cook and mash the potatoes with the butter and sour cream. Mix the spinach with the green onion and egg. Mash the squash with the ginger.

Layer the vegetables as follows in the baking dish:

1/3 potato, squash, 1/3 potato, spinach, remaining potato. Sprinkle with cheese and bake 55 to 60 minutes.
