2 lbs green beans, trimmed, 1/2 onion, minced, 1 package (10) ounce mushrooms, halved, 2 tbsp butter, 1 tbsp flour, 1/2 each ricotta and sour cream, 1/4 salt and pepper, 4 oz shredded cheddar cheese

Heat oven to 350º. Bring green beans and enough water to cover to a boil for 5 minutes. Drain, rinse in cold water. Meanwhile, over medium high heat, cook onion and mushrooms in butter for 8 minutes. Add flour, cook 1 minute. Remove from heat; stir in ricotta and sour cream salt, pepper and beans. Pour in a greased 2 quart casserole and bake 35 minutes.
