DOUGH
4 cups flour (reserve 1/2 cup)
1 heaping tsp salt
1 egg
2 tablespoons cooking oil
1&1/4 cups water

Bacon- slightly less than 1/2 pound
1 medium onion, chopped

12 cups water
salt and pepper to taste
3&1/2 cups potatoes, cubed, uncooked

Measure flour and salt into a bowl
Make a well, and add the egg and oil.
With a fork, blend the egg and oil into a small amount of flour to make a paste.
Gradually add 1&1/4cups water, using the fork to continue to blend until the dough becomes too still to keep blending
Coat hands with oil, and knead the dough for approximately ten minutes until smooth.
Using 1/4 of the dough at a time, flatten to about 1/2 inch and then cut into long strips
Sprinkle flour onto strips
Cut into 1/4 inch chunks
Place in a bowl and toss with flour
Shape and cut remaining dough
While preparing other ingredients, continue to occasionally toss dough to avoid it sticking together

Cut bacon in pieces
Fry bacon until cooked ( but not crisp)
Add chopped onion and cook until onion is tender
Set aside
If using fatty bacon, you may wish to drain off some of the fat

Place 12 cups water into a large pat
Add salt,pepper, and cubed potatoes
Cook until potatoes are almost done
Place cut up dough into sieve and remove excess flour.
Add cut up dough, stirring constantly until boiling.
Add bacon and onions
Decrease heat and boil slowly for 8-10 minutes being careful not to over boil.
