Ingredients: 2 lbs. lean Ground Beef 1 Medium Onion, diced 2 cans of Carrots, drain one 1 tsp Worcestershire Sauce
Gravy: 4 Tbs Butter (1/2 stick) 1/2 cup flour 3 cups Beef Broth (made from beef base or canned) 1 Tbs Maggi seasoning (found near Kitchen Bouquet at market) 2 tsp Kitchen Bouquet salt and pepper to taste
10 Potatoes, peeled, diced, boiled and mashed w/milk and butter, or equivalent amount of instant mashed. 2 cups shredded Cheddar

Directions:Preheat oven to 375º. Brown ground beef in a large skillet. Add the diced onion about half way through the browning process of beef. Add the carrots, one can drained the other undrained and cook over med-high heat until moisture is evaporated. This will impart the carrot flavor into the beef mixture. Add the Worcestershire sauce.
While the beef mixture is cooking, melt the butter in a pan and add the flour. Cook over medium heat, stirring often, to prepare a roux. I take 3 cups of water and put in the microwave for 4 minutes to boil, add 3 teaspoons of beef base to the water along with the Maggi and Kitchen Bouquet. Add this hot liquid mixture to the roux in the pan and whisk until thickened and smooth. Add this mixture to the beef mixture and put all into a LARGE greased casserole dish.
Top with the mashed potatoes and spread potatoes to cover the beef mixture like a pie crust. Sprinkle the cheese on top of all and put into the hot oven for 30-45 minutes or until lightly browned and heated through. |

Notes: Serve with a green salad and you have a wonderful, hearty meal. This recipe can be changed in may ways. To make it easier you may use instant mashed potatoes and 3 cup canned beef gravy. I love adding a can of mushrooms to the beef mixture. When I do this I drain the juice off of the mushrooms and use it as part of my gravy liquid before adding the base. This can be done with the juice off of the carrots too!
If you use ground lamb instead of ground beef you have Shepherd's Pie. When made this way only use 1 can of carrots and add 1 cup of frozen peas to the meat mixture and instead of topping with cheese drizzle some melted butter on the potatoes with a sprinkle of Paprika.
