2 tablespoons flour
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup milk
2 hard boiled eggs, diced
2 tablespoons pimento
3/4 cup chopped fresh green onions, use some of tops
1 head of fresh cauliflower

Directions:
Directions:
Separate cauliflower florets and cook 8 minutes. Make a sauce of first 5 ingredients, add diced eggs, pimento and onion. Place cauliflower in buttered casserole. Pour sauce over the top. Sprinkle 3/4 cup of buttered bread crumbs over the top. Bake 30 minutes at 350 degrees. Add 4 tablespoons or more of grated cheddar cheese on top and bake 10 minute more.Serves 5.
