8-10 birds, cleaned and trimmed
salt, pepper and flour
bacon fat (or oil)
1/2 c. sherry
1/2 c. port
1/8 c. worcestershire
1 small carton of sour cream

Directions:
Directions:
Sprinkle quail with salt and pepper, then roll in flour and brown in bacon fat (or oil). Place breast down in a casserole dish, quails touching each other.
In a small bowl, mix together the sherry, port and worcestershire and pour into the casserole dish.
Bake at 325 degrees for about 4 hours.
Serve warm, spooning pan juices over the birds and offering sour cream on the side for garnish.
