2 15 oz. cans black beans, rinsed and drained
1 can Rotel, drained
1 11 oz. can vacuum-packed corn kernels
1/2 C. fresh cilantro, chopped
1/4 C. green onions, chopped
2 T. red wine vinegar
1 tsp. salt

Directions:
Directions:
In bowl, toss all ingredients. Cover and refrigerate several hours to blend flavors. Serve with tortilla chips and low-fat sour cream, if desired.
