1 1/2 c. sugar
6 tbsp. cornstarch
1/4 tsp. salt
1/2 c. water
1/2 c. fresh lemon juice
3 well-beaten egg yolks
2 tbsp. butter
1 1/2 c. boiling water
1 tsp. grated lemon peel

Meringue Topping:
2 egg whites
1/4 tsp cream of tartar
3 tbsp. sugar
1/2 tsp. vanilla

Bake pie shell at 350º F until lightly browned

Bake meringue at 350º F for 10-15 min. until lightly browned

Sift sugar, cornstarch and salt into 3 qt. saucepan.

Gradually blend in 1/2 cup water and lemon juice. When smooth add the 3 well-beaten egg yolks and butter blending thoroughly.

Add 1 1/2 cup boiling water gradually bring mixture to a full boil stirring gently. As it begins to thicken, reduce heat and allow to simmer slowly for 1 min.

Remove from heat and stir in lemon peel then pour into baked shell.

Meringue topping:

Whip until frothy 2 egg whites. Add cream of tartar and whip until stiff peaks which will lean over slightly when pulled with a wooden spoon.

Beat in sugar 1 tbsp. at a time, be careful not to over beat this mixture. Beat in vanilla and spread on pie bake for 10-15 until the peaks are lightly browned.

This was one of Grandpa Michael Ready's favorite pies. It is delicious the tarter the better. Mom would make this for Dad quite a bit as he had a sweet tooth and loved his desserts. She had a knack for making pie dough. Her mother-in-law taught her how to make the best pies. She could flute the edges and make them look perfect and beautiful.
