1 T. Olive Oil
1/2 cup Orzo Pasta
1 cup Rice
2 cups Chicken Broth
4 seeded and chopped Roma Tomatoes
1 chopped, red or white Onion
1 seeded and chopped Jalapeņo
Handful of chopped Cilantro leaves
1 Lime, zested and juiced
Salt

Directions:

Heat the oil in a sauce pot over medium heat. Add the orzo and toast until deep golden. Stir in the rice and broth and bring to a boil. Reduce heat to low, cover the pot and simmer for 17 to 20 minutes.

In a small bowl, combine the tomatoes, onions, jalapeņo, cilantro, and the zest and juice of the lime. Season with salt to taste.

When rice is cooked, fluff with a fork and stir in the salsa and serve.
