6 Chicken Breasts
15 oz. Pesto Sauce
2 cups shredded or cubed, Monterey Jack Cheese
1 jar Roasted Red Peppers
Salt and Pepper

Directions:
Directions:
Preheat 350º.

Pound chicken until thin. Spread each chicken breast with pesto sauce and cheese. Top with a roasted red pepper.

Roll chicken and secure with toothpicks. Sprinkle with salt and pepper and press into the chicken.

Cook uncovered for approximately 45 minutes.

When I pound the chicken, I use a zip-lock bag. Only zip the bag half way so it doesn't explode when you pound on it.
