6 pork rib chops cut 1" thick
1 17oz can apricot halves
1/4 cup catsup
2 tbsp chopped onion
2 tbsp cooking oil
1 tbsp lemon juice
1/2 tsp dry mustard

Directions:
Cut pocket in each chop. Cut from fat side almost to the edge. Season cavity with a little salt and pepper. Drain apricots , reserving 1/2 cup juice. Put 2 apricot halves in the pocket of each chop. Cut up remaining apricots and set aside. Grill chops for 35 minutes on medium to low heat. Meanwhile, in a saucepan combine catsup, onion, oil,dry mustard, lemon juice, reserved apricot juice and cut up apricots. Heat to boiling. Reduce heat and simmer 15 minutes.
Cook chops 5-8 minutes more, brushing often with catsup mixture. Pass remaining sauce when serving.

This recipe is from the June, 1971 Better Homes and Gardens. Happy to have it written down because the magazine, kept in our recipe box, is just about unreadable. Excellent "grillin' out" recipe for company........ and easy!
