• 2 apples, peeled and diced
• 2 tablespoons lemon juice
• ⅓ cup butter or margarine, softened
• ½ cup brown sugar
• ¾ cup sugar, divided
• 2 eggs, separated
• ¼ cup milk
• 1 cup all-purpose flour
• ½ teaspoon baking powder
• ½ teaspoon baking soda
• 1 teaspoon cinnamon
• ¼ teaspoon salt
• ½ teaspoon nutmeg
• ½ cup chopped walnuts

1. Preheat oven to 350°F. Spray a 9″ square pan with cooking spray containing flour and set aside.
2. Prepare apples, sprinkling with lemon juice as you work; set aside.
3. In large bowl, combine butter, brown sugar, and ½ cup sugar and beat until fluffy. Add egg yolks and milk and beat well.
4. Stir in flour, baking powder, baking soda, cinnamon, salt, and nutmeg until combined.
5. Stir in apples and spread into prepared pan.
6. In small bowl, beat egg whites until foamy. Gradually add ¼ cup sugar, beating until stiff peaks form.
7. Fold in nuts and spread over batter in pan.
8. Bake for 30–40 minutes or until meringue is light brown and crisp. Cool for 30 minutes, then serve.

TIP: The best apples for baking are those that are firm and rather tart. Granny Smith apples are the best choice because they also turn brown less slowly than other varieties. Haralson, McIntosh, and Cortland are also good choices for baking apples. Do not use Gala, Jonathan, or Fuji apples in baking, because they will fall apart during baking.
