1 cup mashed carrots
2 cups flour
3/4 cup shortening
1 cup sugar
1 egg
2tsp baking powder
1/4 tsp salt
1 tsp vanilla

Icing for Cookies
juice and grated rind of an orange = add enough conf sugar until it is of spreading consistency.
Directions:
Directions:
Cream sugar and shortening. Stir in carrots and slightly beaten egg. Add flour. baking powder, salt and vanilla. Drop by teaspoonfuls on a greased cookie sheet and bake 375º 12 to 15 minutes. Spread icing on cookies while they are still warm
