Scallops in White Wine Recipe

2 lbs. scallops, wash well and remove foot
2 c. dry white wine

1/4 c. butter
4 small shallots, finely chopped
24 mushroom caps, sliced
2 Tbsp minced parsley

2 Tbsp. flour
2-4 Tbsp whipping cream

Directions:
Directions:
Simmer scallops in white wine just until done, do not overcook. Drain and reserve liquid.
Saute shallots, mushrooms and parsley in melted butter. Stir in flour until blended. (I like to mix the flour and a little reserve liquid together first before I add it to the sauted shallots mixture to avoid clumping) Add the remaining reserved liquid and 2-4 Tbsp. of whipping cream. Add scallops to the hot sauce. Pour scallop mixture into a shallow casserole dish.

Cover with dry bread crumbs and a dot of butter. (You can also use 1/2 c. Italian bread crumbs and 1/2 c. grated cheddar cheese)

Then brown until golden under the broiler.
