12-16 tiny new potatoes(2lb)scrubbed, 1//4 cup olive oil, 2 TBLSP coarse salt, 1/4 cup fresh thyme or 4 tsp dried thyme, 2 TBLSP fresh rosemary or 2 tsp dried rosemary, 1 TBLSP fresh basil or 1 tsp dried basil, 2 tsp freshly ground white pepper, 4 sprigs of fresh rosemary or thyme for garnish.

Place the potatoes in a bowl and sprinkle with oil, salt, herbs and pepper. Turn several times and let marinate for at least 2 hours or overnight. Preheat oven to 400º F. Place the potatoes in a shallow baking dish with the marinade. Place in oven and turn heat to 350º F and roast the potatoes, turning every 10-15 minutes for 45- 1 hour, or until fork tender. Serve garnished with sprigs off fresh rosemary or thyme.

Variation: Cut a cross in the top of each potato and sprinkle with a1/2 cup of finely grated Romano cheese just before serving!
