2 cups flour
2 tsp soda
2 tsp cinnamon
1/2 tsp salt
3 eggs
3/4 cup oil
3/4 buttermilk
2 tsps vanilla
1 8 1/2 ounce can crushed pineapple well drained
2 cups grated carrots
1 cup chopped nuts
1 3 1/2 can flake coconut

Buttermilk Frosting
1 cup sugar
1/2 cup buttermilk
1/2 cup butter
1 tbsp white corn syrup
1/2 tsp soda
1 tsp vanilla

Directions:
Directions:
Sift tog flour, soda, cinnamon, salt. Set aside. Beat eggs. Beat in sugar, oil, buttermilk and vanilla. Stir in flour mixture until blended. Stir in pineapple, carrots, nuts and coconut. Pour into lightly greased and floured 13 x 9 inch baking pan. Bake At 350 º 55 to 60 min or until cake test done in center. Pierce cake all over with fork.
Combine sugar,buttermilk, butter, corn syrup and soda in saucepan. Bring to a boil and boil 5 min. Remove from heat and stir in vanilla. Pour over hot cake. Let stand until cool. Cut into serving pieces.
