Ingredients: 1/2 C. warm water 2 pkgs dry yeast 2 tbs sugar 1 pkg (3 1/2 oz) instant vanilla pudding mix 1/2 C. melted margarine 2 eggs 1 tsp salt 6 C. Flour
Filling: 1 C. softened butter 2 C. Brown sugar 4 tsp (or more!) cinnamon

Directions:In a bowl combine water, yeast & sugar. Stir until dissolved and set aside.
In large bowl prepare pudding mix according to package directions. Add margarine, eggs and salt, mix well and then add the yeast mixture. Blend.
Gradually add the flour, kneed until smooth. Place in a greased bowl. Cover and let rise until doubled. Punch down dough and let rise again.
Roll out on floured board to 34 x 21" size.
Spread soft butter over rolled dough. In bowl mix sugar with cinnamon and sprinkle over top. Roll up tightly. Cut with knife or thread every 2". Place on lightly greased cookie sheets about 2" apart. Take hand and lightly press down on each roll. Cover and let rise until doubled again. Bake at 350 º for 15-20 minutes. Remove when they start to turn golden and be careful to not overbake. |

Notes: Nuts can be added with the sugar and cinnamon if desired. I frost the warm rolls with a Cream Cheese frosting.
